Before using the saffron (depending on the recipe) you must put it in hot broth or cooking water for few minutes
It should not be cooked at the beginning of the recipe, but it has to be used as late as possible, so it will release their distinctive.
For the best performance let them soften in a little hot water for at least 20 minutes, crushing them with a teaspoon until the water becomes dark yellow.
Before reviving them, you can crumble the stigma pressing it with your fingers so you’ll have a more intense colour.
In this way, however, you’ll lose the beautiful appearance effect given by the presence of the entire pistils on the dish.
